Experience the authentic flavors of Jamaica with this simple yet delicious roasted breadfruit recipe. The Portland Vegan Butter adds a rich and creamy finish to the dish, making it a perfect side or snack.

Preheat the oven to 375°F (190°C). Using a sharp knife, score the breadfruit's skin in a crisscross pattern. This helps the steam escape during roasting.

Set the oven rack to the middle position and preheat it to 400°F (200°C). Place the breadfruit directly on the rack and roast. Flip it once halfway through cooking. Roast until the outside is nicely browned and a skewer or knife can easily pierce through to the center, about 1 to 1½ hours.

Once the breadfruit is roasted to perfection, take it out of the oven and let it cool just enough to handle. Carefully cut it open with a sharp knife, peel away the charred skin, remove the core, and cut the breadfruit into quarters. Serve the warm slices with a generous spread of Portland Vegan Butter and a pinch of salt for added flavor.
